We built Honey House Hot Honey to do the opposite. The heat doesn't fade when it hits warm food — it holds.

That was the whole design brief: a hot honey that still tastes hot after it's been stirred into a sauce, melted over cheese, or spooned onto something straight out of the oven. Most hot honeys are built for the jar, not the plate. Ours is built for what happens after you use it — which is really the only part that matters.
What's Actually in the Jar
No artificial heat, no shortcuts. We start with raw American Clover Honey as the base, then build in our proprietary habanero-based pepper blend and a splash of natural vinegar to sharpen the whole thing into balance. That's it. Real dried peppers meeting real honey, with the vinegar doing the quiet work of keeping the sweet and the heat from stepping on each other.
The goal was never to mask the honey with heat, or mask the heat with honey — it's for the two to elevate each other. You should still taste Clover Honey underneath the burn, not just sugar and pepper flakes.

This recipe isn't a first draft. We went through more than 150 iterations — adjusting the pepper blend, the vinegar ratio, the steep time — before landing on a version where the heat builds instead of overwhelms, and holds up instead of fading. It's the kind of thing you can only get by making a lot of honey and tasting all of it.
